Cheap & Easy Eats:

Choco-Ras Pie: Nothin’ Says Lovin’ Like

 Puddin’ from the (Microwave) Oven!

 By Andrew Newhart

This dessert is quick and easy to prepare in the morning. Put it in the refrigerator to cool and it’s ready to serve as a sweet ending to lunch or dinner.

Ingredients

Two boxes of JELL-O or comparable brand “Cook and Cool” Pudding packages

2 cups milk

1 prepared graham-cracker crust pie shell

1 can or jar of raspberry pie filling

Fresh raspberries (optional)

Preparation

Mix two boxes of  JELL-O or other brand (whatever’s on sale the next time you go to the store)  “Cook and Cool”  pudding packages with 2 cups milk. That's one cup per package. In other words, you add half the required milk that the package instructions call for.

Heat pudding and milk mixture in covered glass bowl in your microwave for 6 minutes, stopping halfway to stir well.

Remove the bowl and allow the mixture to cool for a couple of minutes, while you prepare the pre-made graham-cracker crust pie shell for filling.

Stir the pudding mixture as it cools and add the raspberry pie filling.

Stir for another minute or two to be sure that the raspberry filling is thoroughly mixed with the pudding.

Pour the pudding mix into the pie shell. Cover it with Saran wrap and place in the refrigerator to chill and firm for two to three hours. When it’s ready to serve, you can decorate the top with fresh raspberries and dollops of whipped cream, if you want to dress it up. Enjoy!
